
Ingredients:
– 1 cup rolled oats
– 1 onion, sliced
– 1 green bell pepper, diced
– 1 red bell pepper, diced
– 1 cup mixed vegetables (peas, carrots, corn)
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1 tsp garam masala powder
– Salt and pepper to taste
– 2 tbsp oil
Instructions:
1. Heat the oil in a pan Add the cumin seeds, and let them splutter.
2. Add the sliced onions and sauté until they turn soft and translucent.
3. Add the diced bell peppers and mixed vegetables, and cook for 2-3 minutes.
4. Add the coriander powder, garam masala powder, salt, and pepper, and mix everything well.
5. Add the rolled oats and 2 cups of water.
6. Cover and simmer for 10-15 minutes until the oats are cooked and the water is absorbed.
7. Serve hot with your favorite yogurt or pickle.
