High Protein Indian Vegetarian Meals – Tofu Tikka Masala

Ingredients:

– 1 block of firm tofu, pressed and cut into bite-sized pieces
– 1 cup plain yogurt
– 2 tablespoons tikka masala spice mix
– 1 tablespoon olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 1 can (14 oz) diced tomatoes, drained
– 1 cup heavy cream or coconut milk
– Salt, to taste
– Fresh coriander, chopped, for garnish

Instructions:

1. In a large bowl, mix together the yogurt and tikka masala spice mix. Add the tofu pieces and stir to coat. Let marinate for at least 30 minutes, or up to overnight in the fridge.

2. Preheat the oven to 400°F. Arrange the marinated tofu on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until lightly browned and slightly firm to the touch.

3. While the tofu is baking, heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.

4. Add the minced garlic and grated ginger to the pan and cook for another minute.

5. Add the drained diced tomatoes to the pan and stir to combine. Cook for 5-7 minutes, or until the tomatoes have broken down and the mixture has thickened.

6. Stir in the heavy cream or coconut milk and season with salt to taste. Cook for another 5-7 minutes.

7. Add the baked tofu to the pan and stir to combine. Cook for a few minutes to allow the flavors to meld and the tofu to absorb some of the sauce.

8. Serve hot, garnished with chopped coriander.
